Next to collecting antique prints, one of our other "love's" is cooking.  Following is a recipe for an Easy Breakfast Frittata.   Enjoy!


Easy Breakfast Frittata

Preheat oven to 350 F.

Lightly butter or grease a 9 x 9 casserole dish.

Cook 2 - 3 cups of hash brown potatoes until lightly brown.

Remove hash browns from skillet and spread evenly over the
bottom of casserole.

Grate  1- 2 cups of cheese (cheddar or mozzarella are our favorites).

Spread grated cheese over potatoes.

Whisk 4 - 5 Eggs, adding a little bit of milk or water
and ground pepper.

Pour whisked eggs over hash browns/cheese.

Place in oven and bake 15-20 minutes or until top becomes
lightly toasted and eggs are set..

Frittata can be cut into squares and served with breakfast meat
and fresh fruit.

You can also add diced vegetables (e.g. asparagus, zucchini) to
the casserole between the layers of hash browns and cheese.
